Thai chicken vegetable soup is delicious! A couple of weeks ago I saw this Thai Ginger broth on the clearance rack at Publix. I found a wonderful recipe on the back for Thai Chicken Vegetable Soup! So I am sharing it with you right off the back of the box because I wouldn’t want you to miss out! It is very simple and quick to make. The broth is a bit spicier than I anticipated but suited our family very well. To accompany our soup we made rice. Using our homemade bone broth for the liquid in the rice adds a lot of flavors. I had a bit of onion and zucchini left from other cooking so I sauteed them in a bit of olive oil and then added the bone broth and the rice and covered it until it was done. Some of us ate ours over the rice and some ate the rice separately. Either way, it was all good.

Swanson’s Thai Chicken Vegetable Soup

1 Tablespoon cooking oil

1 medium carrot, cut into 2-inch matchstick-thin strips

1 medium red pepper  cut into 2-inch matchstick-thin strips

1 cup mushrooms ( I used baby Bella)

1 quart Swanson’s Thai Ginger Flavor Infused Broth

2 cups shredded chicken

1 can unsweetened coconut milk

2 Tablespoons of lime juice

2 Tablespoons of chopped fresh cilantro

Heat the oil in a 4-quart saucepan over medium-high heat. Add carrot and pepper and cook 5 minutes until slightly tender. Stir in mushrooms. Add broth to the saucepan and heat to a boil. Reduce heat to medium-low. Stir in chicken, cook 5 minutes until it is hot. Stir in coconut milk and cook until the mixture is hot and bubbling. Stir in lime juice and cilantro.

Fresh Organic Veggies

I am so excited to find organic veggies. During our meet and greet at church this morning I met someone I had never met before. I asked John what he did and he said, farmer. After church, I saw some people at his car getting produce! I was so excited so being my nosy self I had to go see if he had any I could buy. I am posting some beautiful pictures! We will be making salsa! I’m also excited to try these mini eggplants.

 Have you ever felt stuck? Sometimes I feel stuck. I can’t make any progress (it feels) in any direction. I have some goals and I start working on one and hit a road block for some reason so I head a different direction only to meet with a different obstacle. A lot of life is like that! It reminds me of the little activity we did at library programs where you can’t go around it, you can’t go under it, etc. You have to go through it! Much of my life has been like that and I believe that God wants me right in the middle of that situation. Most of the time for a reason beyond my grasp God wants me to live through certain situations. For the good or bad of it, I am there right where God wants me. It doesn’t mean I just sit there, I can try to learn the lessons I am supposed to learn from the situation. God loves me and is working something out in my life whether it is a situation or just a work in me. Thank you, Lord!

This is how my “sanity garden” came to be. My children laugh when I tell them to come and see my “sanity garden”. A while back May 26th to be exact, I was feeling stuck. I had to do something. So I planted some seeds in a few pots and in a tiny little space we have at the townhouse. And I mean tiny! Esther and I even made a little planter box out of pieces of pallets. And I have been thrilled. Seeing even my tiny little herbs sprout and grow has given me a joy I would not have had. So if you are feeling stuck, plant a few seeds today.

I Have the BEST Can Opener! Contest too!

For years I thought that someone needed to invent a better can opener. I have endured a lot of frustrations with can openers. Can openers that have all kinds of issues from partially opening the cans to leaving chewed up pieces of metal in my food. There is also the issue of what it does to my hands and wrists. I have tried can openers that operate from the top of the can and leave no sharp edges to can openers that remove the lid for you. I was still not satisfied.

Did I need a heavy duty can opener or higher quality? So I bought a more expensive one. Did I clean it properly? I researched how to clean a can opener. Did you know you are really NOT supposed to wash can openers according to some sources? Others suggest soaking the can opener in vinegar water all night. For a while, I thought maybe it was my fault that I have so much trouble with can openers! I have been UNHAPPY with can openers.

I suggested to my kids that they invent a better can opener. They’ve invented a lot of things through the years so why not a can opener? I told them they could make a lot of money if they invented one that worked! So far they have not taken me up on the offer.

I have come to realize that I am not the only one in the world who has frustrations with can openers. Recently an acquaintance brought up the subject on Facebook. He too has a large family and he has gone through numerous can openers in his quest. The problem has become frustrating and expensive. He asked for recommendations. There were a lot of responses to his problem with can openers and many sympathizers.

Several years ago I walked into a restaurant supply store in Olympia, Washington and saw a new style can opener. I wasn’t shopping for can openers but I decided to give this one a try. It looked different than the others I had tried, in that it had a longer arm. I found out that it is easier on the wrist too. I love it and I have shared it with others who also love it! I have been using it successfully for several years now and it is still going strong. This is a record for me! I recently found it again online and ordered some for gifts and to share with my family and friends.
